Crispy Chicken Potato Bake — The Church Dinner Favorite That Disappears in Minutes!

When I tell you this dish is dangerous, I mean it — in the best way possible. I made two trays of this creamy, crispy chicken potato bake for our church holiday dinner, and before I could even grab a plate for myself, they were completely gone! People were stopping me mid-conversation just to ask for the recipe.

The magic? A golden-brown, buttery crust on top with soft, cheesy layers underneath. It’s comfort food perfection — hearty, rich, and satisfying.

Ingredients:

  • 3 large potatoes (peeled, boiled, and mashed)
  • 1 cup cooked shredded chicken breast
  • 1 cup mozzarella cheese (plus extra for topping)
  • ½ cup sour cream or heavy cream
  • 1 small onion (finely chopped and sautéed)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1 tbsp chopped parsley (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix the mashed potatoes with butter, cream, garlic powder, salt, and pepper.
  3. Spread half of the mashed potato mixture into a greased baking dish.
  4. Layer on the shredded chicken, sautéed onion, and a sprinkle of mozzarella.
  5. Spread the remaining potato mixture over the top, sealing the edges.
  6. Add more cheese on top for that golden, bubbly crust.
  7. Bake uncovered for 25–30 minutes, until the top is crisp and golden brown.
  8. Let it rest for 10 minutes before slicing — then garnish with parsley.

Serve this with a light salad or veggies, and watch everyone fight for seconds. It’s creamy, crispy, cheesy, and utterly irresistible — a guaranteed crowd favorite every single time! 😋
