  • 1 (14.75 oz) can of pink salmon
  • 1 egg
  • ¼ cup finely diced onion
  • ¼ cup cornmeal
  • ¼ cup flour
  • Salt & pepper to taste
  • Optional: a pinch of garlic powder or paprika
  • 1–2 tablespoons mayonnaise (optional, for extra moisture)
  • Vegetable oil for frying

🍴 Instructions:

  1. Drain the salmon and remove the bones and skin (optional—some leave them in for extra calcium and texture).
  2. In a medium bowl, combine the salmon, egg, onion, cornmeal, flour, and seasoning. If the mixture feels dry, stir in a spoonful of mayonnaise.
  3. Form into patties, about the size of your palm.
  4. Heat a few tablespoons of oil in a skillet over medium-high heat.
  5. Fry the patties for 3–4 minutes on each side, or until golden brown and crispy.
  6. Drain on paper towels and serve hot.
